This page is under reconstruction to break apart the books so that they will be easier to download. This will include the first volume of the Encyclopedia of Practical Cookery. We expect to have the page back together sometime on 14 September 2003 or before.
The bigaradearchives contain scanned images of culinary materials that are of sufficient age to be in the public domain and that also are considered scarce. We hope that by scanning these books and other materials and making them available we can add to a better understanding of culinary history.
The Everyday Cook And Encyclopedia of Practical Recipes,by Miss E. Neil, Chicago, E. A. Weeks & Company 1894, is not very well known but has considerable commonsense material in it. We scanned this book soon after we gained access to it because it had been produced poorly and the copy was literally crumbling in our hands. In addition, the well-used copy had not only fly specks and spots of food on it but also was poorly typeset. In the process of scanning we did considerable cleanup to pages where we could.

The Encyclopedia of Practical Cookery,edited by Theodore Francis Garrett, was published in London around 1890. The eight-volume set is cast in a format similar to the Larrouse Gastronomique. We have arranged access to these books and will be scanning them as time permits. Here's the cover of the first volume:
